My version of Beans and Rice Recipe for a Working Woman

Rice and bean stew in my style.


If  all customers were like me,  
restaurants would probably close... ❤❤
Thankfully, they're not...
I guess I'm just one of those people
who genuinely enjoy a home cooked meal.
And, yes... my mindset is feminist.
FYI, we also know how to whip it down.
Just saying...


You know the problem with a healthy attempt to eating?
It tends to taste bland.

Not this one...
Why do I like this meal?
Its very healthy, protein filled
and equally savory.
You can also make it vegan if you like*
Here is how to make it...









You have the option of buying canned,
or raw beans. The latter
requires more work; depending on
your taste. This recipe will show 
you how to use both.

INGREDIENTS:

  • 3 cups raw organic black beans or 1 can organic black beans
  • 1 cup organic frozen corn. 🌽 
  • 1 Habanero pepper. 🌶 
  • 1 cup of sliced mushrooms.  🍄 
  • 2 tomatoes. Diced. 🍅
  • 1/2 cup ground crayfish*, or dried fish (optional)
  • 2 Tbsp palm oil.
  • 1 Tbsp olive oil.
  • 1 tsp ground ginger and garlic.
  • 1/4 onion. Diced. 
  • 1/4 cup spring onions.
  • salt & pepper & spices to taste (white pepper, black pepper)
  • Some Cameroonian spices. (country onions, (shirrum, eye bean).
  • Fresh basil leaves.
  • Water.

* Can be left out in vegan options, or replaced. 


PROCESS:


1. Prep your raw beans. You can do a quick soak
which is my preferred method,
or an overnight soak.

2. Heat a little cooking oil into a skillet. 
Sauté your onions and spring onions.


3. Add some tomatoes into the pot.

4. You can also add a little water, to help with the sourness of the tomatoes, as well as a little salt to taste.

5. When the tomatoes are cooked, the mushrooms, and crayfish.

6. You can soon add in your beans, and corn.

7. At this point, you may add in some veggies 
( spinach), pepper,
the african spices.

8. Add some palm oil. Let it cook for about five minutes under a lid.





9. Serve over basmati long grained rice.

Cooked basmati rice.



And maybe a salad?
